These delicious chewy cookies are free from oil, dairy, gluten, eggs and refined sugar. This recipe from Deliciously Ella is easy to make and perfect for a quick breakfast, snack after exercise or to help when you need a bit of energy.
Ingredients
180g ground almonds
12 Medjool dates (you can use other dates but soak in boiling water for 10 minutes to soften and drain before use)
70g sultanas or raisins
1 tablespoon of chia seeds
Splash of plant milk
A bar of Meraki Cacao (we used Inca)
Method
- Preheat oven to 180 degrees Centigrade and line a baking tray with baking paper
- Put almonds, chia seeds, deseeded dates into your food processor & process until looks like bread crumbs
- Add the sultanas and process briefly to combine
- Pour into a mixing bowl and add the plant milk to combine
- Take handfuls and roll into 12 balls and place on the baking tray
- Flatten into cookie shapes
- Bake for around 15 minutes until just golden brown – take care not to burn
- Cool on a wire tray
- Melt the Meraki Cacao bar gently in a glass bowl over a pan of shallow simmering water or in the microwave
- Drizzle the melted cacao bar over the cookies and allow to set fully
- Store in an airtight tin and enjoy!
